Greetings Jack,
pulseaudio:
According to https://wiki.archlinux.org/index.php/PulseAudio, just edit the libao configuration file, /etc/libao.conf, and change:
default_driver=pulse
Pandora protocols:
That's a question better answered by PromyLop, who developed libpiano. He moved off the XML protocol and onto the JSON one used by mobile device apps in hopes it would be more stable; this happened summer 2012 so I'm not sure it's long enough to tell. But, you'd think it would be more stable because getting people to update software is difficult, and the non-techies get frustrated when things just break; in a web browser, you can expect they're always running the latest client since you send it to them every startup.
The TLS key changes from time to time, but there's a utility in the contrib folder to determine the new one.

I can get around this by using pulseaudio and forcing the audio card to stay initialized all of the time. However, I was not sure if pianod can use the pulse device.
